ONION SOUP WITH CARROTS AND APPLES

Ingredients

  • 1 1/2 cups carrots
  • 3/4 cup onions
  • 1/2 cup Granny Smith apples
  • salt to taste
  • 1/2 tsp dried mixed herbs
  • 1/2 cup low-fat milk
  • fresh ground black pepper to taste
  • water

Directions

  • Chop the carrots, onions and apples
  • Boil all of them in a pan with 1 1/2 cups of water until they are tender
  • Let them cool slightly before blending with a mixer
  • Transfer the mixed soup to a pan, add the herbs, milk and 1/2 cup of water
  • Add salt and pepper to taste and bring to a boil while stirring
  • Let cool for a minute or two before serving
